The opening of the Auberge de la Charme in 1994 marked the first solo flight of David Zuddas. With recognition from his peers, appreciation from the public and the award of one Michelin star this passionate chef decided to follow a new path in 2008.WithFabrice Dameron, he decided to give in to his longing (Envies being the French for longings or desires) for new places and different things; using produce from the market he has devised a mischievous bistronomic cuisine which crosses North Africa and Asia. Creativity presides over the menu here and this is epitomised first of all by a traditional terrine, (terrine à l'ancienne) with seasoning of vinegar and quince pulp. Next this same creativity is demonstrated by a chicken supreme served with local green lentils and chorizo from Aldudes and lastly by delicacies such as a chocolate biscuit, pumpkin ice-cream , and a hint of chicory.
