Sylvain Delaunay graduated from the St Méen le Grand Hotel and Catering School. He continued his professional development in some of the great French establishments like the Ritz and the Jules Verne. He went on to open his own restaurant in Rennes. The cuisine in Les Carmes restaurant with its pleasant and modern décor, is sophisticated and full of flavour. It's in tune with the seasons, making the use of local produce a priority.
